Mexican Wedding Cookies

These cookies are usually prepared during special occasions like weddings, festivals etc. So I decided to prepare the same for one such special occasion at DK’s Culinary Bazaar (A.W.E.D.). I stumbled upon this recipe here.

Here is the recipe:

Mexican Wedding Cookies


Ingredients:
  • 1 cup (2 sticks) Butter, softened
  • 1 cup powdered Sugar
  • 1 tsp Vanilla essence
  • 2 cups All-purpose flour
  • 1 cup mixed nuts (pecans, almonds, cashews etc.) (I used Planters mixed nuts)

  1. Finely chop the nuts or run once in a blender, but don’t make them into a powder.
  2. Preheat oven to 350°F.
  3. Meanwhile, in a large bowl, mix ½ cup of the powdered sugar with the melted butter and vanilla essence and beat well with electric mixer (an egg beater also can be used to beat) until light and fluffy. Add the flour slowly along with the chopped mixed nuts and beat the mixture until well blended.
  4. Shape dough into small balls. On an ungreased baking sheet, place these balls as much as 1 inch apart.
  5. Bake for 14 to 15 minutes or until bottoms of cookies are lightly browned.
  6. Cool for 5 minutes on the baking sheets. Roll the warm cookies in remaining ½ cup powdered sugar until evenly coated.
  7. Then place these cookies on wire racks and let them cool completely.
  8. Store these cookies in an air-tight container at room temperature. Enjoy with a cup of coffee or tea.
