Coconut Patties (Kobbari Vadalu)

Hope you all had a wonderful Vinayaka Chavithi! Mine was great too! Here is a snap of our pooja and the naivedyam (Savories) that we offered.


Vinayaka Chavithi Pooja

Here is the recipe for Coconut Patties (Kobbari Vadalu):

Coconut Patties (Kobbari Vadalu)


Ingredients:
  • 1 ½ cups Rice Flour
  • ½ cup desiccated Coconut (fresh or dry)
  • ½ tsp Cumin Seeds
  • 2 or 3 green Chilies, cut into tiny pieces
  • A Handful of Cilantro
  • A Small piece of Ginger, cut into tiny pieces
  • A Pinch of Soda
  • 1 medium Onion (optional) (I didn’t use it) cut into tiny pieces
  • Salt as required
  • Oil to deep fry
Method:
  1. In a bowl mix all the ingredients except oil into a thick paste like we do for vadas, using a small amount of water. Adjust salt.
  2. Heat the oil in a deep-bottomed pan. Then take small amount of the batter and flatten each ball into the shape of a patty. Drop these patties carefully into the hot oil.
  3. When the patties become golden brown in color, remove from the oil and transfer to a paper towel to remove extra oil. Repeat the same process with remaining batter.
  4. I made these for the naivedyam of Lord Ganesha, as an instant savory. So I didn’t use any onions in this. These can be prepared on various occasions or just for a snack with tea.
  5. Enjoy these crunchy kobbari vadalu with your favorite chutney/dip or just like that. 
  6. Yummy!

As I made these as an offering to Lord Ganesha, I am sending these delicious vadas to “Krishna – Ganesh Chaturthi” event being hosted by Purva of Purva’s Daawat.
