I was looking for some yummy kid treats for MBP: Kids Food and found this delicious eggless muffins recipe in Madhuram’s Eggless Cooking. It involved very limited work and I had all the ingredients on hand. I immediately adopted it and made these muffins. I must say they tasted so great and came out perfect. It was a great hit with my kids and it’s a keeper recipe for sure. Thanks Madhu for this wonderful recipe. These muffins are not only healthy as it has the goodness of apples and raisins but also yummy with the perfect blend of ingredients. It’s a great snack for small kids too! 

I didn’t make any changes to the original recipe. I just omitted walnuts as told in the original recipe as I don’t have walnuts or just about any nuts on hand. I also didn’t use brown sugar and just substituted with regular sugar.


Ingredients: (Makes 24 mini muffins or 12 large muffins)
Note: I wrote my changes in red color font.
  • Water – ¼ cup
  • Brown Sugar – ¼ cup (I used regular sugar – ½ cup)
  • Granulated Sugar – ¼ cup (See above)
  • Raisins – ½ cup
  • Apples, grated – 1 cup (2 small Apples)
  • Butter – ¼ cup
  • Cinnamon – A pinch
  • Nutmeg – A pinch
  • All Purpose Flour – 2 cups
  • Baking Soda – 1 tsp
  • Walnuts (Chopped) – ¾ cup (I omitted these)
Preparation:
Apple Raisin Muffins
  1. Combine water + sugar + raisins + grated apples + butter + cinnamon + nutmeg in a saucepan and bring to a boil. Remove from the heat and let it cool completely.
  2. Mix together the flour + soda + nuts (if using) in a bowl. Add the cooled apple mixture to this and mix until blended well.
  3. If the batter is too dry add some milk to make it soft and thin. I added 3/4 cup of milk to the batter to make it thin. Madhuram suggested the same in her original recipe.
  4. Line up a muffin tray (I used 12 cup large muffin tray) with paper cups and pour the batter in each cup.
  5. Bake in a preheated oven at 350 F for 17 minutes. Use a tooth pick to test the doneness of muffins. If the toothpick comes out clean when poked into the muffins, it means they are done. Remove from the oven and let them cool completely before eating.
  6. Enjoy these yummy muffins any time of the day! Thanks once again for this delicious recipe Madhu.

Welcome to my blog. You don't need to melt the butter separately. When we add it to the saucepan it melts automatically by the heat. Hope this helps.

Hello Uma
Thank you for your answer about butter. I have butter sticks. Should I only cut 1/4 th cup, mix with the batter and put it in the oven? Sticks are very hard hence this concerns.

You have to add the solid butter (yes, cut only 1/4 cup of butter stick) to the pan along with the grated apples, raisins, sugar and water and heat it. Then the butter will melt automatically due to the heat. You don't need to melt it separately. Don't mix the butter directly to the flour. Hope this clarifies your doubt. Please don't hesitate to ask me if you still have doubts! :)
