- 1 Big Potato or 2 small Potatoes
- 1 cup Plain Yogurt
- 1 small Onion, chopped fine
- 2 Green Chilies, chopped fine
- A small piece of Ginger, peeled and chopped fine
- A pinch of Turmeric
- Few Curry leaves
- 1 tsp Oil
Preparation:
- Wash and boil potatoes until cooked. Peel the skin of potatoes, mash well and keep aside.
- Heat oil in a pan, add onion + green chilies + ginger + curry leaves + turmeric and sauté well until cooked.
- Later add mashed potato along with yogurt and mix well.
- Add salt as needed, mix well again and turn the flame off.
- That’s all. Delicious potato perugu pachadi is ready to be eaten.
- Transfer the pachadi to a serving bowl and enjoy with rice or chapathis.
